Classic Lattice Apple Pie

The quintessential comfort food. A flaky, artisanal all-butter crust encasing a mountain of spiced Granny Smith apples. It's not just a pie; it's a warm hug on a plate.

Ingredients

  • 2 discs of All-Butter Pie Crust (chilled)
  • 1.5 kg Granny Smith apples (peeled, cored, and sliced 1/4 inch thick)
  • 150g Granulated Sugar
  • 3 tbsp All-Purpose Flour (for thickening)
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Freshly Grated Nutmeg
  • 1 tbsp Lemon Juice
  • 1 Egg (beaten, for egg wash)
  • 1 tbsp Demerara Sugar (for sprinkling)

Instructions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Roll out half the dough on a floured surface and gently place it into a 9-inch pie dish.

Step 3

In a large bowl, toss the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice until well coated.

Step 4

Mound the apples high in the pie shell (they will shrink as they bake).

Step 5

Roll out the second disc of dough and cut into strips. Weave a lattice pattern over the apples.

Step 6

Trim the edges and crimp to seal. Brush the lattice with the beaten egg and sprinkle with Demerara sugar.

Step 7

Bake for 20 minutes at 200°C, then lower the heat to 190°C (375°F) and bake for another 30-40 minutes until the crust is golden and the filling is bubbling thick.

Step 8

Allow to cool completely (at least 3 hours) before slicing to let the filling set.
